Salpimentamos. Formamos peque\u00f1as bolitas, las pasamos por harina y fre\u00edmos sin dorar mucho. Reservamos. Pochamos la cebolla en aceite de oliva con el ajo, el laurel y el azafr\u00e1n. Reducimos con el vino blanco, a\u00f1adimos la harina, rehogamos y mojamos con el caldo. Cocemos 5 minutos y sazonamos. Trituramos y colamos. Tiene un color profundo, cubierto. Su aroma es elegante, complejo, a frutas de bosque, con tonos minerales y especiados. En boca es persistente, complejo y resulta muy equilibrado.Ponemos la salsa en el fuego, a\u00f1adimos las alb\u00f3ndigas y cocemos 5 minutos.
