{"id":862,"date":"2023-01-07T19:07:40","date_gmt":"2023-01-07T18:07:40","guid":{"rendered":"https:\/\/emilioyascension.es\/cookbook1\/?p=862"},"modified":"2023-01-07T19:47:23","modified_gmt":"2023-01-07T18:47:23","slug":"escapada-a-merida-2-2","status":"publish","type":"post","link":"https:\/\/emilioyascension.es\/cookbook1\/escapada-a-merida-2-2\/","title":{"rendered":"Mil hojas de crema de vainilla"},"content":{"rendered":"<p><strong>INGREDIENTES<\/strong><\/p>\n<ul>\n<li>Masa de hojaldre<\/li>\n<li>50 gr. de az\u00facar<\/li>\n<li>50 gr. de nata<\/li>\n<li>250 ml. de leche<\/li>\n<li>3 yemas de huevo<\/li>\n<li>20 gr. de harina de ma\u00edz<\/li>\n<li>1 nuez de mantequilla<\/li>\n<li>1\/2 vaina de vainilla<\/li>\n<\/ul>\n<p><strong>PREPARACI\u00d3N<\/strong><\/p>\n<p>HOJALDRE<\/p>\n<ul>\n<li>Con una regla, cortamos la masa de hojaldre en porciones iguales.<\/li>\n<li>Para que el hojaldre, caramelice, espolvoreamos una capa de az\u00facar glas.<\/li>\n<li>Cubrimos con un papel de horno, y hacemos presi\u00f3n, poniendo encima otra bandeja o similar. De este modo no sube la masa.<\/li>\n<li>Al horno 200 grados de 15-20 minutos hasta que se dora la masa.<\/li>\n<\/ul>\n<p>CREMA PASTELERA<\/p>\n<ul>\n<li>En un bol mezclamos el az\u00facar con la Maizena, y la mitad de la leche.<\/li>\n<li>En un cazo, disolvemos la mantequilla, y a\u00f1adimos la leche restante y la nata junto con la pulpa de la vainilla.<\/li>\n<li>Sobre la mezcla de la harina, a\u00f1adimos las yemas batidas de huevo.<\/li>\n<li>Cuando empiece a hervir, incorporamos la harina con las yemas, poco a poco y sin dejar de remover hasta que espesen.<\/li>\n<li>Lo trasladamos a un recipiente, poniendo por encima papel film a pie (sin que cree vapor), y se introduce en el frigor\u00edfico unas 2 horas.<\/li>\n<\/ul>\n<p><strong>MONTAJE<\/strong><\/p>\n<ul>\n<li>Colocamos una capa de hojaldre, una de crema (hasta 3 capas), y espolvoreamos con az\u00facar glas y fruta fresca de temporada.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>INGREDIENTES Masa de hojaldre 50 gr. de az\u00facar 50 gr. de nata 250 ml. de leche 3 yemas de huevo 20 gr. de harina de ma\u00edz 1 nuez de mantequilla 1\/2 vaina de vainilla PREPARACI\u00d3N HOJALDRE Con una regla, cortamos la masa de hojaldre en porciones iguales.
