{"id":837,"date":"2023-01-07T17:56:29","date_gmt":"2023-01-07T16:56:29","guid":{"rendered":"https:\/\/emilioyascension.es\/cookbook1\/?p=837"},"modified":"2024-01-03T08:28:43","modified_gmt":"2024-01-03T07:28:43","slug":"pure-de-patatas-zanahoria-y-puerros-2","status":"publish","type":"post","link":"https:\/\/emilioyascension.es\/cookbook1\/pure-de-patatas-zanahoria-y-puerros-2\/","title":{"rendered":"Sopa de rape y langostinos"},"content":{"rendered":"<p><strong>INGREDIENTES<\/strong><\/p>\n<ul>\n<li>2 litros de agua.<\/li>\n<li>500 grs. de langostinos crudos<\/li>\n<li>400 grs. de rape<\/li>\n<li>1\/2 pimiento rojo<\/li>\n<li>1 cebolleta grande<\/li>\n<li>4 dientes de ajo<\/li>\n<li>1 cayena peque\u00f1a<\/li>\n<li>2 cucharadas de harina<\/li>\n<li>2 hojas de laurel<\/li>\n<li>aceite<\/li>\n<li>tomillo<\/li>\n<li>punta de piment\u00f3n dulce<\/li>\n<li>perejil<\/li>\n<li>sal<\/li>\n<\/ul>\n<p><strong>PREPARACI\u00d3N<\/strong><\/p>\n<ul>\n<li>En una cazuela, calentar 2 litros de agua con sal y un poco de aceite y cocer el rape duarnte unos 5 mins. (sale muy bueno con las colas congeladas. Una vez fr\u00edo, desmenuzar y reservar.<\/li>\n<li>Cocer, las cabezas y caparazones de los langostinos en un poco de agua.<\/li>\n<li>Colar, y reservar el caldo.<\/li>\n<li>Pochar en una sart\u00e9n: los ajos, cebolla, pimiento, laurel y cayena.<\/li>\n<li>Cuando est\u00e9 pochado, a\u00f1adir el piment\u00f3n y la harina. Fre\u00edr un poco para que se tueste, y evitar el sabor a crudo, y a\u00f1adir un poquito de caldo de los langostinos cocidos, o de haber cocido el rape.<\/li>\n<li>Cocer a fuego lento durante 10 mins.<\/li>\n<li>Triturar toda esa mezcla y a\u00f1adirla al agua donde cocimos el rape.<\/li>\n<li>A\u00f1adir el caldo que quede de las cabezas de las gambas.<\/li>\n<li>Poner a cocer todo junto, a\u00f1adiendo el rape desmenuzado y los langostinos (previamente a la plancha dorados en la sart\u00e9n).<\/li>\n<li>Si se desea, se puede a\u00f1adir fideos u otra pasta.<\/li>\n<li>Al servir,
